1. Zucchini Noodles With Roasted Tomatoes 

Ingredients:

1 lb. of fresh zucchini noodles

1 pint of cherry tomatoes

Extra virgin olive oil

Balsamic vinegar

Fresh basil leaves

Salt

Pepper

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Spread the cherry tomatoes onto a baking sheet and drizzle with olive oil and balsamic vinegar. Add salt and pepper to taste.
  3. Bake in the oven for 25-30 minutes or until the tomatoes are roasted and juicy.
  4. Serve the roasted tomatoes over top of the fresh zucchini noodles and add some fresh store basil leaves! Enjoy 

2. Grilled Chicken With Orzo and Roasted Vegetables 

Ingredients:

-1 lb. chicken breasts, pounded thin

-1 cup  cooked orzo

-1/2 cup olive oil, divided

-1/2 lemon, juiced

-1 garlic clove, minced

1 Tablespoon fresh chopped mint 

-1/4 teaspoon salt

-1/4 teaspoon black pepper

-1 cup assorted roasted vegetables (I used broccoli, cauliflower and cherry tomatoes)

Instructions: 

  1. Preheat the grill to medium-high heat. 2. In a small bowl, whisk together orzo, olive oil, lemon juice, garlic, fresh mint, salt and black pepper. 3. Grill chicken for about 5 minutes per side, or until cooked through, slice the chicken into strips 4. Add orzo mixture to the grill sliced chicken and toss in the roasted vegetables  

3. Cajun Turkey Chili 

Ingredients:

1 lb. ground turkey

1 onion, chopped

1 green pepper, chopped

1 can kidney beans, drained and rinsed

1 can corn, drained

1 can diced tomatoes, undrained

2 tsp. Cajun seasoning

1 tsp. chili powder

1/2 tsp. garlic powder

1/4 tsp. black pepper

Instructions:

In a large saucepan over medium heat, cook the turkey, onion and green pepper until the turkey is browned. Add the beans, corn, tomatoes with juice, Cajun seasoning, chili powder, garlic powder and black pepper. Bring to a simmer and cook for 10 minutes. Serve with shredded cheese and sour cream on top if desired.

4. Spinach Fettuccine With Basil Pesto Shrimp 

Ingredients:

-1/2 lb. uncooked spinach fettuccine

-1/4 cup basil pesto sauce

-1/4 teaspoon garlic powder

-1/4 teaspoon salt

-1/4 teaspoon black pepper

-1/4 teaspoon dried basil

-1/4 teaspoon dried thyme

-1/4 teaspoon dried oregano

-1/4 teaspoon red pepper flakes

-8 oz. cooked and peeled shrimp

2 cups of fresh baby spinach 

Directions:

Cook pasta according to package instructions. Drain and return pasta to pot. Add pesto, garlic powder, salt, black pepper, basil, thyme, oregano, and red pepper flakes; stir to combine. Add shrimp; stir to combine, add the baby spinach leaves .  Serve immediately.

5. Classic Meatballs with Spaghetti Sauce 

Ingredients:

1 pound ground beef

1/2 cup Italian-seasoned bread crumbs

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup milk

1 large egg

1/4 cup olive oil

2 cups spaghetti sauce

16 meatballs (about 1 inch in diameter)

8 ounces mozzarella cheese, shredded (2 cups)

Directions:

Preheat the oven to 350 degrees. In a large bowl, combine ground beef, bread crumbs, Parmesan cheese, garlic powder, salt and pepper. In a small bowl, whisk together milk and egg. Add to the beef mixture and mix well. Shape into 16 meatballs.

In a large ovenproof skillet or Dutch oven, heat olive oil over medium heat. Add meatballs and cook until browned all over, about 8 minutes. Pour spaghetti sauce over top. Sprinkle it with mozzarella cheese. Bake in a preheated oven until the cheese is melted and bubbly, about 15 minutes. Serve next to cooked spaghetti or make it into a meatballs sandwich ! enjoy
